Apple Sauce with Yogurt and Passion Fruit
The Apple Sauce with Yogurt and Passion Fruit from Spoonsparrow combines humble and exotic ingredients in a delightful way.
Ingredients
- 0.5 Vanilla pod
- 800 g apples
- 4 tbsp Lemon juice
- 1 cinnamon stick
- 150 g Yogurt (3.5% fat)
- 1 tbsp honey
- 2 passion fruits

Halve the vanilla pod lengthwise; scrape out the seeds with a knife and place them in a bowl.

Wash the apples, quarter them, core them, cut into pieces and add to a pot with 250 ml water, lemon juice, cinnamon stick and the scraped vanilla seeds.

Bring everything to a boil and simmer gently for 10–15 minutes, stirring occasionally, until the apples break down.

Remove the cinnamon stick and vanilla pod from the pot. Strain the softened apples through a sieve or fine-mesh strainer and let cool for 10 minutes.

Meanwhile, add the yogurt to the bowl with the vanilla seeds and stir in honey.

Divide the apple sauce and yogurt into four glasses. Halve the passion fruits, scoop out the pulp and spoon it over the yogurt.
