These Peanut Butter Energy Balls from Spoonsparrow are ideal for a quick energy boost in between.

Ingredients

  • 160 g dried dates (pitted)
  • 60 g unsweetened peanut butter
  • 110 g rolled oats
  • 1 tbsp ground flaxseed (15 g)
  • a pinch salt
  • 40 g peanuts
  • 20 g cacao nibs
  • 3 tbsp shredded coconut (15 g)

Instructions

    Soak the dates in warm water for 10 minutes. Drain them in a sieve and reserve the soaking liquid.

    Blend the soaked dates, peanut butter, and 2 tbsp of soaking water until smooth using a blender or food processor. Mix in oats, flaxseed, and salt to form a sticky, moldable dough.

    Chop the peanuts and fold them in with the cacao nibs. Shape the mixture into walnut‑size balls by hand.

    Roll the energy balls in shredded coconut, place them on a plate, and refrigerate for 30 minutes until firm.
