Turkey Liver with Onions and Toasted Bread

Ingredients

  • 500 g turkey liver
  • 4 onions
  • 4 tbsp butter
  • 1 tbsp whole grain sugar
  • 40 ml cognac
  • 1 tbsp oil
  • 1 tbsp whole wheat flour
  • 8 slices whole wheat baguette
  • Salt
  • Pepper

Instructions

    Wash and pat the liver dry, then slice into 8 thin pieces.

    Peel the onions and cut them into strips.

  3. 3.

    Heat 2 tablespoons of butter in a pan and sauté the onions for about 1–2 minutes, tossing occasionally. Sprinkle with whole grain sugar, lightly caramelize, then deglaze with cognac, bring to a boil briefly, and remove from the pan.

    Add the remaining butter with oil to the pan and heat. Dust the liver slices with flour and cook them slowly in the pan for about 2–4 minutes.

    Toast the bread slices until crisp, top them with the sautéed onions, and arrange the liver slices on top. Sprinkle with salt and pepper.
