Ingredients
- 750 g potatoes (firm‑starch)
- 1 egg (size M)
- 2 tbsp flour
- Salt
- freshly ground pepper
- 60 g clarified butter
- 12 giant shrimp (raw, shell on)
- 1 bunch spring onions
- 1 red bell pepper
- 2 tbsp olive oil
- 1 cup crème fraîche (250 g)
- 4 tbsp finely chopped herbs (e.g., parsley, dill, chives, basil)
Instructions

Peel, wash and grate the potatoes. Mix with egg, flour, salt and pepper. Heat clarified butter in a pan over medium heat and bake the potato patties in portions. Keep warm.

Rinse the shrimp and pat dry. Trim and finely chop the spring onions. Slice the bell pepper lengthwise, remove seeds, rinse and finely chop it as well.

Heat olive oil, cook the shrimp for 4‑5 minutes. In the last seconds add the chopped spring onions and bell pepper to sauté together.

Whisk crème fraîche with salt, pepper and herbs. Serve the potato patties topped with a dollop of crème fraîche and the shrimp.
