Ingredients

  • 6 Eggs
  • 1 box of watercress
  • 4 tbsp chopped mixed herbs (parsley, chervil, tarragon, dill...)
  • 2 tbsp scallion rings
  • 1 tbsp yogurt
  • 5 tbsp mayonnaise
  • Salt
  • Pepper (freshly ground)
  • 2 tsp white wine vinegar
  • 12 slices sandwich bread
  • 6 slices cooked ham
  • 6 iceberg lettuce leaves
  • 1 bunch radishes
  • potato chips

Instructions

    Hard boil eggs for 10 minutes. Cool, peel and finely chop. Chop watercress and mix with other herbs, yogurt, and mayonnaise. Combine chopped eggs with herb mayo mixture; season with salt, pepper, and vinegar.

    If needed, toast bread slices lightly. Layer 6 toasted slices with ham and lettuce, then spread egg salad on top. Place remaining toast slices over the filling, press gently, and cut each sandwich into two triangles. Garnish with radishes and chips.
