Tomato sauce

Ingredients

  • 300 g onions
  • 2 cloves garlic
  • 1 tbsp oil
  • 2 kg tomatoes
  • 1 tbsp vinegar essence
  • 2 tbsp sugar
  • Salt
  • pepper (ground)
  • 1 basil leaf

Instructions

    Peel the onions and garlic; slice the onions into thin rings, dice the garlic finely. Heat the oil in a pot, sauté the onions until translucent.

    Briefly blanch the tomatoes, shock them, peel and roughly chop. Add them with the vinegar essence, 125 ml water and sugar to the pot with the onions. Season well with salt and pepper. Bring to a boil while stirring, then simmer gently over medium heat for about 1 hour, tasting for spiciness.

    Meanwhile, wash the basil and roughly chop it. Stir into the sauce shortly before the end of cooking. Ladle the hot sauce into carefully cleaned glass jars and seal tightly.
