Ingredients
- 300 g onions
- 2 cloves garlic
- 1 tbsp oil
- 2 kg tomatoes
- Salt
- 1 tbsp vinegar essence
- 125 ml water
- 2 tbsp sugar
- pepper (ground)

Peel the onions and garlic; slice the onions into thin rings, dice the garlic finely. Heat the oil in a pot, then sauté the onions until translucent.

Briefly blanch the tomatoes over boiling water, shock them in cold water, peel and roughly chop. Add the tomatoes with the other ingredients to the pot with the onions. Stir and bring to a boil, then simmer gently on medium heat for about 1 hour while stirring frequently, seasoning to taste. When ready, ladle hot into clean jars and seal tightly.
