Ingredients
- 1 stalk Celery
- 2 onions
- 2 cloves garlic
- 2 carrots
- 2 parsley roots
- 4 Sage leaves
- 2 tarragon sprigs
- 6 thyme sprigs
- 3 tbsp olive oil
- 2 tbsp Tomato paste
- 500 g canned tomatoes
- Sea salt
- sugar
- Cayenne pepper

Wash, trim and slice the celery.

Peel and dice the onions.

Peel and roughly cube the carrots and parsley roots. Sauté celery, onions, carrots and parsley roots in hot oil, add peeled garlic cloves. Then stir in tomato paste and tomatoes. Tie herbs into a bundle and add to the pot. If needed, pour in some water and simmer for about 45 minutes. Remove the herb bundle and puree the sauce finely. Season with sea salt, sugar and cayenne pepper.
