Ingredients

  • 4 pork schnitzels
  • 1 onion
  • 1 Garlic clove
  • Salt
  • Pepper
  • 2 tbsp oil
  • 400 g diced tomatoes
  • 50 g black olives (pitted)
  • 1 tbsp capers
  • 1 bunch Basil
  • pinch of sugar

Instructions

    Peel and finely chop the onion and garlic. Season the pork schnitzels with salt and pepper. Heat the oil in a pan. Fry the schnitzels over medium heat for 2-3 minutes on each side. Remove and keep warm.

    Sauté the onion and garlic in the same pan. Add the tomatoes, simmer gently for 5 minutes, season with salt and pepper. Stir in olives and capers, let it cook for another 5 minutes. Taste and adjust with sugar. Before serving, fold in roughly torn basil leaves.
