Ingredients
- 1 tbsp butter
- 1 finely chopped shallot
- 8 fully ripe beef tomatoes
- 0.125 l white wine
- 1 bay leaf
- 0.5 garlic clove
- Salt
- Pepper
- 2 tbsp Sour cream
- 1 tsp chopped herbs (basil, tarragon)

Sauté the shallot in butter.

Dice the tomatoes and add them to the shallot, deglazing with white wine. Add bay leaf and garlic, season with salt and pepper. Strain through a sieve, fold in sour cream, and stir in herbs.
