Tomato Sauce

Ingredients

  • 1 kg bottle tomatoes
  • 2 Bay leaves
  • 1 tsp peppercorns
  • 0.5 tsp allspice
  • 2 tbsp Tomato paste
  • 2 garlic cloves (chopped)
  • 2 shallots (chopped)
  • 4 oregano sprigs
  • 2 tbsp olive oil
  • 100 ml red wine
  • a pinch sugar
  • Salt

Instructions

    Wash tomatoes, remove stems and dice.

    Sauté shallots and garlic in hot oil, add tomato paste and cook briefly. Deglaze with red wine and add tomatoes. Pour enough water to cover the tomatoes. Add spices and oregano, simmer on low heat for about 30 minutes, stirring occasionally. If needed, add more water. Strain through a sieve and season with sugar and salt.
