Ingredients
- 500 g tomatoes
- 1 onion
- 3 cloves garlic
- 1 bay leaf
- 1 tbsp Tomato Paste
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- basil (for garnish)
Instructions

Peel and finely chop the garlic and onion, then sauté both in hot olive oil until translucent. Add the bay leaf and tomato paste, cooking briefly.

Heat tomatoes over a flame, shock with cold water, peel, quarter, roughly chop, and add to the pan. Simmer on low heat for about 15 minutes. Season with salt, sugar, and pepper. Serve garnished with basil.
