Ingredients
- 250 g spring onions
- 150 g celery stalks
- 3 cloves garlic
- 3 tbsp olive oil
- 2 kg tomatoes
- Salt
- 2 Bay leaves
- 1 tsp sugar
- white pepper
- Basil

Wash, trim, and roughly chop the spring onions, celery, and tomatoes. Peel and coarsely mince the garlic.

Heat the oil in a pot and sauté the prepared vegetables, pour in 1 cup of water, add the bay leaves, and bring to a boil while stirring. Season with salt, sugar, and pepper, then stir in the basil leaves. Simmer uncovered over low to medium heat, stirring frequently for about 1 hour.

Strain the mixture through a fine sieve. Bring back to a boil and reduce by another ~10 minutes. Adjust seasoning, fill sterilized jars with twist-off lids, and seal tightly.
