Ingredients
- 2 organic oranges
- 1 tsp Honey
- 125 ml Madeira wine
- 50 ml red wine vinegar
- 350 ml poultry stock
- 1 tbsp Cornstarch
- Salt

Rinse the oranges hot, pat dry and cut the zest into very thin strips with a sharp knife. Blanch the zest by placing it in boiling water for 1 minute, then drain and shock in cold water.

Add honey to a pot and briefly caramelize. Deglaze with orange juice, Madeira, and vinegar. Reduce about two-thirds. Add stock and bring to a boil. Whisk cornstarch with 1 tbsp water until smooth, stir into the sauce, and simmer briefly. Add the orange zest and season with salt.
