Ingredients
- 2 kg fresh tomatoes (very ripe)
- 1 large onion
- 2 tbsp olive oil
- 3 cloves garlic
- 0.25 l Vegetable broth
- 100 ml ketchup
- Salt
- Pepper
- 2 sprigs oregano
- 1 sprig thyme
- 0.5 bunch Basil
Instructions

Peel the onion and garlic, halve them and roughly dice; sauté in olive oil. Wash the tomatoes, blanch for a few seconds, cool, peel, quarter, and add to the onions in the pot.

Add vegetable broth, 2 sprigs of basil, thyme, and oregano; bring to a boil, simmer for about 10 minutes, remove herb stems, and strain the sauce through a sieve.

Bring to a second boil, season with ketchup, salt, and pepper, fold in some basil leaves, and ladle hot into sterilized bottles. Seal with rubber rings and caps, clamp shut, and let cool.
