Tomato Sauce

Ingredients
- 2 shallots
- 2 Garlic cloves
- 1 stalk Celery
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 100 ml dry white wine
- 400 g diced tomatoes (canned)
- 2 tbsp freshly chopped herbs (parsley, basil)
- Salt
- sugar
- ground pepper
Instructions

Peel and finely chop the shallots and garlic. Wash, trim, and finely chop the celery, then sauté with the shallots and garlic in hot olive oil in a pot until translucent.

Stir in the tomato paste, deglaze with wine, and add the diced tomatoes. Simmer gently for about 20 minutes.

Fold in half of the herbs, season with salt, sugar, and pepper to taste, then sprinkle with the remaining herbs before serving.
