Herb Mustard Sauce

The herb mustard sauce by Spoonsparrow pairs well with many dishes and tastes great for the whole family!
Ingredients
- 1 Shallot
- 2 tbsp butter
- 2 tbsp spelt whole‑grain flour
- 300 ml Vegetable broth
- 100 ml heavy cream
- 2 tbsp medium‑sharp mustard
- 2 tbsp freshly chopped herbs (e.g., tarragon and dill)
- Salt
- 1 tsp lemon juice
- white pepper
Instructions

Peel the shallot and dice finely. Melt the butter in a saucepan and sauté the shallot cubes until translucent.

Gradually pour in the broth while stirring, then add the cream. Simmer gently for about 10 minutes, or longer if needed, adding more broth to reach desired thickness.

Strain the sauce through a fine sieve and reheat without boiling. Stir in mustard and herbs, season with salt, lemon juice, and pepper, then serve.
