Oriental Chickpea Ragù

This Oriental chickpea ragù from Spoonsparrow is packed with vital nutrients and pairs perfectly with pasta.
Ingredients
- 1 onion
- 1 Garlic clove
- 2 carrots
- 350 g tomatoes
- 2 tbsp olive oil
- 1 tsp Harissa Paste
- 200 g Chickpeas (canned; drained weight)
- 100 g sour cream (10% fat)
- Salt
- Pepper
- 0.5 tsp Ras el-Hanout
- a pinch cayenne pepper
Instructions

Peel and finely dice the onion and garlic. Peel, trim, and finely dice the carrots. Wash the tomatoes and cut them into small cubes.

Heat oil in a pot. Sauté the carrots, onion, and garlic for 5 minutes over medium heat. Add harissa, tomatoes, and 50 ml water; simmer for 10 minutes over low heat.

Drain the chickpeas, let them dry, add to the sauce and simmer for another 5 minutes. Stir in sour cream and season with salt, pepper, ras el-hanout, and cayenne pepper.
