Tomato Salsa

Fresh tomato salsa made with cherry tomatoes, celery, shallots, garlic and a bright vinaigrette from Spoonsparrow.

Ingredients

  • 1 clove garlic
  • 1 Shallot
  • 300 g cherry tomatoes
  • 1 stalk Celery
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 150 ml Vegetable broth
  • Salt
  • pepper (ground)
  • sugar (optional)

Instructions

    Peel and finely chop the garlic and shallot. Blanch the tomatoes, cool, peel, quarter, seed, and dice into small cubes. Wash, trim, and dice the celery.

    Heat oil in a pot and sauté the garlic with the shallot until translucent. Add celery and tomatoes, cook briefly, then deglaze with vinegar. Pour in broth and simmer on medium heat for 3-4 minutes. Season with salt, pepper, and sugar to taste. Transfer salsa into jars and let cool.
