Apple and Goose Breast Salad

Ingredients
- butter (for the pan)
- 1 EL honey
- 1 EL lemon juice
- 20 g melted butter
- 1 pinch dried rosemary
- 1 pinch fennel seeds
- Salt
- Pepper (from the grinder)
- 3 tart apples
- 4 handful arugula
- 500 g smoked goose breast (or duck breast as substitute)
- 4 EL cranberry jam
- 4 EL Olive oil

Preheat the oven to 200°C (400°F) with top and bottom heat. Grease a baking dish.

Whisk honey, lemon juice, butter, rosemary, and fennel together. Season with salt and pepper. Wash apples and cut into wedges; leave or remove cores as desired. Toss with the dressing, place in the dish, and bake for about 25 minutes until apples are tender.

Meanwhile wash arugula, trim tough stems, and dry thoroughly. Slice goose breast thinly.

Let baked apples cool briefly, then arrange on plates with sliced goose breast and arugula. Add a spoonful of cranberry jam and a drizzle of olive oil. Sprinkle with rosemary and fennel. Serve with crisp white bread.
