Ingredients

  • 4 small baguette rolls
  • 2 cloves garlic
  • 150 g soft butter
  • Salt
  • 4 mini cucumber slices
  • 400 g cocktail tomatoes
  • 300 g light green bell pepper (4 peppers)
  • 2 red onions
  • 4 tbsp red wine vinegar
  • 6 tbsp Olive oil
  • 1.5 tsp dried oregano
  • Pepper
  • sugar
  • 200 g green olives
  • 150 g pickled pepperoni
  • 360 g Salakis -25% salt (2 packs)
  • a handful fresh oregano leaves
  • 2 tbsp sumac (optional, Mediterranean seasoning available in Middle Eastern markets and online)

Instructions

    Preheat the oven to 150°C. Cut each baguette roll crosswise into slices without cutting all the way through, place on parchment paper. Peel and finely chop garlic, mix with soft butter and season with salt. Spread garlic butter into the cut spaces of the rolls, wrap in parchment and bake on a tray for 6-8 minutes on the middle rack.

    Wash and slice cucumbers crosswise. Wash cocktail tomatoes, halve lengthwise and remove stems. Wash bell peppers, remove stems and seeds, slice crosswise into rings. Peel onions, halve lengthwise and cut half the length into thin slivers.

    Mix red wine vinegar with olive oil and dried oregano, season with salt, pepper and 1-2 pinches of sugar.

    Combine cucumbers, tomatoes, peppers, and onions with the vinaigrette, arrange on four plates with olives and pepperoni. Roughly break Salakis -25% salt over the salads, sprinkle with fresh oregano leaves and optional sumac. Serve with garlic baguette rolls.
