Ingredients
- 500 g spaghetti
- 400 g Tomatoes
- 80 g black olives (pitted)
- 3 tbsp olive oil
- 2 shallots
- 1 Garlic clove
- Salt
- Pepper (freshly ground)
- 1 tbsp thyme leaves
Instructions

Wash the tomatoes, blanch them briefly, peel, halve, remove seeds and dice into small cubes.

Slice the olives into thin strips.

Peel and finely chop the shallots and garlic; sauté in hot olive oil until translucent, add tomato cubes, simmer for a few minutes, season with salt and pepper, then sprinkle thyme over the mixture.

Cook spaghetti in plenty of boiling salted water to al dente, drain, reserving one cup of pasta water.

In a bowl combine spaghetti and reserved pasta water with the tomato sauce, season with pepper, and scatter olive strips on top.
