Ingredients

  • 400 g spaghetti
  • Salt
  • 6 ripe tomatoes
  • 2 balls mozzarella (125 g each)
  • 0.5 bunch Parsley
  • 0.5 bunch Basil
  • 4 tbsp olive oil
  • 1 tbsp Lemon Juice
  • pepper (ground)

Instructions

    Cook the pasta in boiling salted water until al dente.

    Meanwhile, blanch the tomatoes, shock them, peel, quarter, seed and dice into small cubes. Drain the mozzarella and cube it as well. Wash the parsley and basil, shake dry, pluck leaves from stems, set aside some basil leaves, and chop the rest with the parsley. Mix the herbs with oil, lemon juice, salt, and pepper and taste.

    Combine tomatoes and mozzarella in a bowl, drain the pasta, add to the mixture and toss with the herb vinaigrette.

    Serve in small bowls garnished with basil leaves.
