Ingredients

  • 800 g tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 4 allspice berries
  • 1 bay leaf
  • 1 clove
  • 1 cinnamon stick
  • 2 sprigs parsley
  • 1 sprig lovage
  • 4 tbsp brown sugar
  • 1 tsp mustard powder
  • 100 ml wine vinegar
  • Salt
  • Cayenne pepper

Instructions

    Wash the tomatoes, remove the stem ends and dice them. Peel the onion and garlic cloves and dice them as well. Wash the bell pepper, halve it, deseed it and dice it.

    Sauté the onion, garlic and bell pepper in hot oil, add allspice, bay leaf, clove, cinnamon briefly, then add the tomatoes. Simmer for about 15 minutes. Then stir in the herbs, sugar, mustard powder and vinegar. Let thicken for another 10–15 minutes. Strain through a sieve, bring to a boil again and season with salt and cayenne pepper. Transfer into a pre‑boiled bottle, seal tightly and let cool.
