Ingredients

  • 2.5 kg tomatoes
  • 3 small onions
  • 4 Garlic cloves
  • 5 tbsp olive oil
  • 2 fresh bay leaves
  • 2 sprigs thyme
  • 1 sprig rosemary
  • 2 stems oregano
  • 1 stem basil
  • Salt
  • Lemon juice
  • pepper (ground)
  • 1 pinch sugar

Instructions

    Boil the tomatoes, shock them in cold water, peel and dice. Peel and finely dice the onions and garlic. Warm the olive oil in a large pot, sauté the onions and garlic until translucent, add the tomatoes and stir.

    Simmer the tomato sauce over medium heat for about 1 hour, letting it reduce to a slightly thick consistency while stirring occasionally.

    Wash the herbs, shake dry, tie them into a bouquet and let them simmer during the last ~20 minutes. The tomatoes should break down finely during cooking; mash with a potato masher if needed.

    Season with salt, lemon juice, pepper and sugar, remove the herbs, and fill the hot sauce into clean screw‑top bottles. Seal immediately and allow to cool.
