Ingredients
- 50 g dried red chili peppers
- 3 cloves garlic
- 2 tsp cumin
- 2 tsp coriander seeds
- 1 tbsp salt
- 150 g tomato paste
- 80 ml olive oil
- olive oil (to cover)
Instructions

Wash, trim, slit lengthwise, deseed the chilies, pour 150 ml boiling water over them and soak for 15 minutes.

Peel and chop the garlic. Finely grind cumin and coriander in a mortar.

Blend the chili (with soaking water), garlic, spices, salt, tomato paste and 1 tbsp oil into a puree.

Add more oil until a fairly firm paste forms. Transfer to a clean sealable jar and cover with oil.
