Tomato Celery Relish

Ingredients
- 1 kg tomatoes
- 150 g stalk celery
- 2 sour apples (e.g., Boskop)
- 1 bell pepper
- 1 chili pepper
- 125 g sugar
- 80 ml wine vinegar
- 1 tbsp mustard seeds
- Salt
- 0.5 tsp ground cinnamon
- 0.25 tsp ground cloves

Briefly blanch the tomatoes for a few seconds, shock them in cold water, peel, quarter, core and roughly chop. Clean and wash the celery, slice thinly. Peel the apples, quarter them, remove cores and finely dice. Wash the bell pepper, clean, halve, core, remove all white membranes and dice small. Wash the chili pepper, slit lengthwise, core, remove all white membranes and dice very fine.

Add tomatoes, celery, apples, bell pepper and chili to a wide pot.

Stir in sugar, wine vinegar, mustard seeds, 2 tsp salt, cinnamon and cloves. Bring to a boil and reduce to a gentle simmer for about 1 hour, stirring occasionally. Immediately fill hot-washed jars and seal immediately.
