Ingredients

  • 3 organic lemons
  • 1000 g pears
  • 40 g Ginger (1 piece)
  • 125 ml white grape juice
  • 125 ml pear concentrate
  • 2 tsp agar-agar
  • 2 tsp ground cinnamon

Instructions

    Boil jars and lids in a large pot of hot water for about 10 minutes. Then remove the jars from the water and turn them upside down on clean kitchen towels to cool.

    Rinse lemons hot, pat dry, and finely grate the zest of one lemon. Cut lemons in half and squeeze out the juice. Wash pears, quarter them, core, chop small, and mix with the lemon juice. Roughly puree in a bowl. Peel ginger, dice very finely, and add to the pear purée.

    In a pot combine lemon zest, pear purée, grape juice, pear concentrate, agar-agar, and cinnamon; bring to a boil. Simmer for about 5 minutes over medium heat, then immediately fill the prepared jars to the brim with the jam. Seal each jar with its lid and place them upside down. Let cool and store in the refrigerator.
