Apple Pear Tarragon Jam

Ingredients

  • 500 g sour apples
  • 500 g pears
  • 2 untreated limes
  • 1 kg gelatin sugar (1:1)
  • 3 sprigs tarragon

Instructions

    Peel, quarter, core the apples and pears, then dice the fruit. Mix in juice of one lime and the sugar; let sit overnight to draw out juice.

    Heat the second lime over boiling water, zest it, squeeze the juice, and finely chop the tarragon leaves. Add everything to the fruit mixture and bring to a boil. Stir occasionally and simmer for about 4 minutes. Transfer to prepared jars, seal, invert for 10 minutes, then turn upright and cool.
