Tomatillo Salsa with Tortilla Chips

Ingredients

  • 500 g tomatillo
  • 2 red chili peppers
  • 1 onion
  • 2 cloves garlic
  • 1 lemon
  • 1 tsp sugar
  • 1 tbsp Olive Oil
  • Salt
  • a handful of coriander leaves
  • a handful of flat‑leaf parsley
  • 125 g tortilla chips (pre‑made)

Instructions

    Wash the tomatillos, trim off the stem ends and dice the fruit into small cubes. Set aside half for garnish and puree the other half finely.

    Rinse the chilies and cut them in half. Remove stems, seeds, and membranes. Finely chop the chilies. Peel and finely chop the onion and garlic cloves as well.

    Combine all ingredients in a bowl. Squeeze half a lemon over the mixture, then stir in 2 tbsp lemon juice with sugar and olive oil to form the salsa. Season with salt, adding more lemon juice or sugar if desired.

    Rinse the coriander and parsley, shake dry, and finely chop the leaves. Stir them into the salsa and let everything meld for a few minutes. Serve with tortilla chips for dipping.
