Ingredients

  • 2 tbsp pine nuts
  • 2 anchovy fillets
  • 100 g green olives (pitted)
  • 2 tbsp freshly chopped parsley
  • 2 tbsp olive oil
  • 200 g goat cream cheese
  • Salt
  • Pepper (freshly ground)

    Toast the pine nuts in a dry skillet until fragrant, then transfer to a plate and let cool.

    Pat the anchovy fillets dry. Roughly chop the olives and combine them with the toasted pine nuts, parsley, olive oil, anchovies, and goat cream cheese in a blender; blend until smooth. Season with salt and pepper, then serve in one or more small bowls.
