Ingredients
- 4 tomatoes
- 2 Spring Onions
- 50 g quark
- 100 g plain yogurt
- 1 tbsp Lemon Juice
- Salt
- Pepper
- Tabasco
- 1 tbsp chives

Blanch the tomatoes, shock them in cold water, peel, quarter, seed and dice. Wash and trim the spring onions, slice into thin rings.

Whisk the quark with yogurt and lemon juice until smooth; season with salt, pepper and Tabasco. Fold in the tomatoes, spring onions and chives, then serve in small bowls.
