Ingredients
- 1 Vanilla bean
- 200 ml milk
- 200 ml heavy cream
- 4 tbsp sugar
- 2 Eggs
- 3 egg yolks

Slice the vanilla bean lengthwise and scrape out the seeds. Combine both with the milk, cream, and 2 tablespoons of sugar in a saucepan and bring to a boil. Remove from heat. In a separate bowl whisk the eggs with the remaining sugar and egg yolks. Whisk over a hot water bath using an electric mixer. Slowly fold in the hot vanilla cream while stirring constantly from the sides to the center until the sauce is silky.
