Ingredients

  • 125 g soft butter
  • 50 g shallots
  • 1 Garlic clove
  • 50 ml port wine
  • 50 ml Vegetable broth
  • 0.5 tsp honey
  • 3 sprigs thyme
  • Pinch Salt
  • Pepper (freshly ground)
  • pinch ground cumin

Instructions

    Place the butter in a mixing bowl and beat until fluffy.

    Peel and halve the shallots and garlic, then finely dice or mince them.

  3. 3.

    Heat the onions together with the port wine and broth in a saucepan.

  4. 4.

    Add the honey and simmer for about 20 minutes until reduced. Set aside to cool.

  5. 5.

    Wash the thyme, shake dry, pluck the leaves, finely chop, and stir into the onions. Season with salt, pepper, and ground cumin. Mix with the fluffy butter.

    Transfer to small bowls and chill for about an hour. Serve garnished with thyme flowers.
