Ingredients
- 800 g mixed berries (e.g., blackberries, raspberries, gooseberries, blueberries, etc.)
- 3 onions
- vegetable oil
- 6 tbsp sugar
- 1 star anise
- 2 cloves Allspice
- 1 bay leaf
- 2 cloves cloves
- 160 ml white wine vinegar
- 1 tsp mustard powder
- Salt

Wash and strain the berries. Peel and finely chop the onions; sauté in a hot pot with 2 tbsp oil until translucent. Add the berries, sugar and spices (in a spice sachet), cook briefly, then deglaze with vinegar. Simmer over medium heat for about 25 minutes, remove the spices, puree the mixture, strain through a fine sieve, stir in mustard powder, bring to a boil again, and season with salt.

Fill into a prepared bottle, seal tightly, and store cool and dark.
