Cranberry Red Wine Sauce

Ingredients
- 100 g dried cranberries
- 250 ml red wine
- 1 piece untreated orange zest
- 2 tbsp port wine
- 3 tbsp orange juice
- 4 tbsp currant jam
- 0.5 tsp sharp mustard
- Salt
- a pinch ginger powder
- a pinch cayenne pepper
- a pinch white pepper
- 2 tbsp almond slivers

Soak the cranberries overnight in wine and keep cool. The next day add a piece of orange zest, bring to a boil, stirring occasionally. Remove the zest, then stir in port wine, orange juice, currant jam and mustard.

Taste and let the sauce cool slightly. Meanwhile roast the almonds in a non‑stick pan without fat until golden yellow. Let them cool and fold into the sauce before serving.
