Tofu Patties

Ingredients

  • 250 g tofu (fine)
  • 250 g mixed vegetables (carrots, leeks, onions, celery…)
  • 1 minced garlic clove
  • 1 egg
  • 2 tbsp chopped parsley
  • 1 tbsp soy sauce
  • breadcrumbs
  • Salt
  • ground pepper
  • oil for frying

Instructions

    Puree the tofu finely. Wash, peel, clean and dice the vegetables; mix them with the garlic into the tofu.

    Add the egg, parsley, and soy sauce, then add enough breadcrumbs to form a workable dough. Season with salt and pepper and shape into small patties.

    Fry in hot oil for about 3 minutes per side until golden brown and serve over steamed Chinese cabbage if desired.
