Ingredients

  • 3 tbsp honey
  • 75 g soft butter
  • vanilla sugar
  • 3 eggs
  • 75 g buckwheat flour
  • 75 g hazelnut kernels
  • baking powder
  • milk
  • 1 tsp grated untreated lemon zest
  • Ground Cinnamon
  • 1 pinch cloves
  • 1 pinch allspice
  • 1 pinch Cardamom
  • a pinch salt
  • butter (for the waffle iron)

Instructions

    Whisk honey, butter, and vanilla sugar until fluffy. Gradually add eggs. Stir in flour and nuts, then fold in baking powder.

    Add milk, lemon zest, cinnamon, cloves, allspice, cardamom, and salt to the butter mixture; stir well. Cover dough and let rest about 10 minutes.

    Brush waffle iron with a little butter and preheat on medium. Spoon 1–2 small ladles of batter onto the iron, spread evenly, and bake into waffles. Remove and keep warm, brushing the iron with more butter between batches.
