Ingredients

  • 4 slices of toast bread
  • 400 g pork tenderloin
  • 300 g Mushrooms
  • 2 Spring Onions
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp clarified butter
  • 2 tbsp chopped parsley
  • 1 Garlic clove
  • 125 g mozzarella

Instructions

    Preheat the oven to 220°C fan.

    Roast the toast slices in the oven until golden brown.

    Wash, pat dry and cut the pork tenderloin into ~2 cm thick slices. Clean and slice the mushrooms. Trim, wash and ring-cut the spring onions.

    Season the meat with salt and pepper and sear it in hot clarified butter for 2-3 minutes. Remove. Sauté the mushrooms and spring onions in the pan fat for about 3 minutes, seasoning with salt and pepper. Add parsley and finely chopped garlic, cooking briefly. Slice the mozzarella.

    Distribute the mushrooms and meat over the toast slices. Top with cheese and bake in the hot oven for about 5 minutes until melted.
