Ingredients

  • 800 g green tomatoes
  • 2 onions
  • 1 Garlic clove
  • 2 cm fresh ginger
  • 1 Green Chili Pepper
  • 1 pinch ground coriander
  • 80 ml apple cider vinegar
  • 100 g sugar
  • 120 ml orange juice
  • 1 pinch salt
  • 50 g mixed herbs (e.g., parsley, chervil, thyme, dill)
  • 1 salad herb
  • 3 tomatoes
  • 8 slices toast bread
  • 300 g pastrami

Instructions

    For the relish simmer the tomatoes, cool, peel, quarter and cut into large pieces.

    Peel the onion, garlic and ginger and dice finely. Wash the chili, halve lengthwise and slice into thin rings. Mix all with coriander, vinegar, sugar, orange juice and salt; transfer to a pot and simmer over medium heat for 1 hour, stirring occasionally. Remove from heat and let cool.

    Meanwhile wash the herbs, dry by spinning and remove leaves. Separate salad leaves, rinse, pat dry and shake off excess water. Wash tomatoes, trim stems and slice.

    Toast the bread slices and drain. Arrange side by side on a work surface and spread with relish. On half of the slices place tomato slices, pastrami, salad and herbs; top with another toast slice, secure with a wooden stick and serve.
