Leek and Carrot Toast with Raclette Cheese

- 1 stalk leeks
- 1 Carrot
- 3 tbsp chopped parsley
- Salt
- freshly ground pepper
- freshly grated nutmeg
- 4 slices raclette cheese
- 4 slices whole-grain toast

Wash, trim, and cut the leeks crosswise. Blanch in plenty of salted water for about 5-6 minutes as a unit. Drain and let cool slightly. Peel the carrot and grate it coarsely.

Toast the bread slices lightly in a toaster and spread with a little butter. Slice the blanched leeks thinly with a sharp knife and arrange them on the toast. Season generously with salt, nutmeg, and pepper. Sprinkle grated carrot and parsley over the leeks. Top each slice with a piece of raclette cheese. Place the prepared toasts on a baking sheet and gratinate under a hot oven grill for 2-3 minutes. Serve immediately.
