Ingredients

  • 8 slices whole grain toast
  • 80 g watercress
  • 1 Shallot
  • 60 g mayonnaise
  • 1 splash Lemon juice
  • Pepper (freshly ground)
  • 120 g smoked salmon (sliced)

Instructions

    Preheat the oven to grill mode.

    Grill the toast slices on both sides for about 2 minutes until golden brown (or use a sandwich maker).

    Rinse the watercress, shake dry and roughly chop. Peel and finely dice the shallot. Mix into the mayonnaise with lemon juice and pepper. Spread onto 4 toast slices and top with salmon. Distribute the watercress over the salmon and place another toast slice on top. Press lightly and serve cut diagonally.
