Tiramisu with Almond Cookies

Ingredients
- 100 g white grapes
- 4 sheets of white gelatin
- 1 egg yolk
- 1 egg
- 50 g powdered sugar
- 1 pinch salt
- 1 packet Bourbon vanilla sugar
- 20 ml white rum
- 150 g mascarpone
- 100 ml heavy cream (at least 30% fat)
- 100 ml espresso
- 20 ml orange liqueur
- 150 g cantucci
- 125 g white chocolate
- marbled chocolate shards for decoration

Wash the grapes and let them drain well. Soak the gelatin in cold water. In a bowl whisk the egg yolk, egg, sugar, salt, and vanilla sugar over a hot, non-boiling water bath until creamy. Dissolve the drained gelatin in slightly warmed rum, fold into the foam mixture, remove from heat and let cool slightly. Fold in the mascarpone. Whip the cream stiff and fold it in.

Pour espresso into a shallow dish, stir in orange liqueur, and dip cantucci until fully soaked. Arrange cantucci in dessert glasses and cover with half of the cream. Roughly grate or shave white chocolate and sprinkle about three-quarters over the cream in the glasses. Then add the remaining cream on top and place the glasses in the freezer for about 10 minutes. Garnish with the remaining chocolate shavings and some grapes. Decorate with marbled chocolate shards as desired.
