Mascarpone Cake

Ingredients
- 2 Eggs
- 80 g sugar
- 400 g mascarpone
- 200 ml whipping cream
- 1 packet gelatin powder
- 200 ml cold coffee
- 40 ml brandy (or Marsala or almond liqueur)
- 20 ladyfingers
- cocoa powder (for dusting)
- chocolate curls (for garnish)
Instructions

Separate the eggs and whisk the yolks with half of the sugar over a hot water bath until pale and creamy (best with an electric mixer). Remove from heat, cool while stirring, and gradually fold in the mascarpone. Beat the egg whites with the remaining sugar until stiff peaks form and fold into the cream mixture. Whip the cream with gelatin powder until stiff and gently fold it in.

Mix the coffee with the brandy. Briefly dip half of the ladyfingers in the mixture and line the bottom of a flat pan (about 18x25 cm) with them. Spread half of the cream over the layer and smooth it out. Cover with a second layer of soaked ladyfingers and spread the remaining cream on top.

Refrigerate for at least 2 hours.

Before serving dust generously with cocoa powder and garnish with chocolate curls.
