Tiramisu

Ingredients

  • 3 eggs
  • 80 g caster sugar
  • 500 g mascarpone
  • 100 ml whipping cream
  • 200 ml coffee
  • 20 ladyfingers
  • cocoa powder (for dusting)

Instructions

    Separate the eggs. Whisk the yolks with half of the sugar over a hot water bath using an electric mixer until light and creamy. Remove from the water bath, continue whisking until the mixture has cooled, then gradually fold in the mascarpone. Beat the egg whites with the remaining sugar until stiff peaks form and fold into the cream. Whip the cream to stiff peaks and fold it in as well.

    Dip half of the ladyfingers briefly into the coffee and line the bottom of a shallow pan (about 18x25 cm) with them. Spread half of the mascarpone mixture over the base and smooth it out. Cover with a second layer of soaked ladyfingers and spread the remaining cream on top.

    Refrigerate the tiramisu for at least 3 hours before serving. Dust generously with cocoa powder just before serving.
