Ingredients

  • 150 g Strawberries
  • 300 g rhubarb
  • 70 ml apple juice
  • 4 tbsp liquid honey
  • 150 g mascarpone
  • 80 g yogurt
  • 1 vanilla bean (scraped out)
  • 150 g ladyfingers
  • 3 kiwis
  • mint (for garnish)

Instructions

    Clean and wash the strawberries, then roughly chop them. Clean, wash, peel the rhubarb and cut into about 1.5 cm pieces; steam together with the strawberries in apple juice until tender. Let cool, taste, and optionally sweeten with honey.

    Whisk mascarpone with yogurt, vanilla bean, and remaining tablespoon of honey until smooth. Optionally halve the ladyfingers and lay half of them on four dessert bowls. Spoon half of the rhubarb compote and half of the mascarpone cream over the ladyfingers; repeat the layering once more. Refrigerate for at least 2 hours.

    For serving, peel the kiwis and cut into wedges or slices, place them atop the cream, and garnish the Kiwi Tiramisu with mint.
