Strawberry Cream Cheese Tiramisu

Ingredients
- 6 tbsp sugar
- 2 tbsp honey
- 60 g chopped almonds
- 6 sheets white gelatin
- 750 g strawberries
- 8 Tbsp sugar
- juice of one lemon
- 50 ml orange liqueur
- 250 g double cream cream cheese
- 250 g whipping cream
- 1 packet vanilla sugar
- 180 g ladyfingers

Melt the sugar in a pan until it turns into a light caramel. Stir in honey and almonds, then let cool on parchment paper.

Soak the gelatin sheets in cold water. Wash, trim, and cube about 200 grams of strawberries; puree the remaining berries with sugar and lemon juice.

Squeeze out excess water from the gelatin, dissolve it in a small pot over low heat with the orange liqueur, and mix into the strawberry purée.

Whisk together cream cheese, whipping cream, and vanilla sugar; fold in the strawberry cubes. Chop the almond crumble and combine it with the mixture until about 4 tbsp remain. Add a thin layer of the cream mixture to the bottom of a dish. Soak the ladyfingers well in the remaining strawberry purée and place them over the cream layer. Cover with more purée and the rest of the cream mixture. Top with any leftover purée and almond crumble, then cover and refrigerate for 3–4 hours.
