Ingredients

  • 2 Eggs
  • 0.5 tsp mustard powder
  • 2 tbsp white wine vinegar (or fresh lemon juice)
  • 500 ml plant oil
  • Salt
  • Pepper (freshly ground)
  • liquid honey (optional)

Instructions

    Whisk the eggs with mustard powder and vinegar in a food processor or with an immersion blender. While whisking, slowly drizzle in the oil until the mixture thickens (at least 1 minute). Season with salt, pepper, and honey to taste.

    Divide the mayonnaise into three portions. Keep one portion as the base recipe. Mix another portion with 4–5 tbsp chopped herbs (optional) using an immersion blender. Stir a third portion with 1–2 tbsp tomato paste and ½ tsp cayenne pepper. Serve with fresh raw vegetables if desired.
