Champignon Skewers

Ingredients

  • 32 medium equal-sized mushrooms
  • 2 Garlic cloves
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped lemongrass
  • 3 tbsp Soy sauce
  • 3 tbsp Sesame oil
  • neutral oil
  • 1 red chili pepper
  • 1 Garlic clove
  • 6 tbsp peanut butter (with pieces)
  • 2 tbsp Lime juice
  • 6 tbsp soy sauce
  • 4 tbsp sesame oil
  • 200 ml coconut milk
  • 8 wooden skewers
  • 2 chopped spring onions
  • 1 tbsp roasted peanuts

Instructions

    Clean the mushrooms, trim stems and place in a bowl. Peel and finely chop garlic, then mix with ginger, lemongrass, soy sauce and sesame oil; combine with mushrooms. Turn repeatedly for about 4 hours to marinate.

    Wash the chili pepper, halve it, remove seeds and finely chop. Peel and finely chop another garlic clove. Warm peanut butter slightly with both garlic pieces, add lime juice, soy sauce and sesame oil, then stir in coconut milk. Whisk until smooth and taste. Remove mushrooms from the marinade, skewer four each onto a stick. Grill skewers all around until golden brown, brushing occasionally with the marinade. Alternatively, heat oil in a pan and sear the mushroom skewers until golden brown, brushing with the sauce. Serve finished skewers with sauce, garnished with chopped spring onions and peanuts.
