Ingredients
- 200 g corn (canned)
- 2 egg yolks
- 1 Egg white
- 3 tbsp Flour
- salt pepper
- clarified butter (for frying)
- 1 tbsp boiling water
- 1 tbsp sugar
- 1 red chili pepper
- 2 Garlic cloves
- 1 tbsp Rice vinegar
- 1 tbsp Lemon Juice
- 2 tbsp fish sauce

Drain the corn and mix in a bowl with egg yolks, salt, and pepper. Sprinkle flour over the mixture and fold in; beat the egg white until very stiff and fold it into the batter. Heat clarified butter and fry portions of the batter for 2 minutes on each side until golden yellow. Drain on paper towels and serve.

For the chili dip, peel and press the garlic through a press. Wash the chili pepper and slice into thin rings. Combine both with the remaining dip ingredients and stir.
